Balanced, elegant, not overly sweet
This sorbet should taste fresh, sharp and lightly spiced — not sugary.
Ingredients:
- 4–5 plum halves from Magogo Plum preserve
- 120 ml plum syrup (from the jar)
- 80–120 ml water (adjust to taste)
- 1 tbsp lemon juice (optional, only if needed)
- Pinch flaky salt
- 1 tsp glucose syrup or honey (optional – improves texture)
Method
1. Blend
Blend plum halves + syrup until smooth.
2. Balance
Taste.
If too intense, add a little water.
If too sour, add 1–2 tsp extra sugar or honey.
You want:
Bright acidity
Gentle sweetness
Soft spice finish
3. Add pinch salt
Salt enhances fruit and controls bitterness.
4. Churn
Churn in ice cream maker until softly set.
Or freeze in shallow tray, stirring every 30 minutes for 3–4 hours.
Texture Note
Because the preserve contains sugar syrup, it freezes beautifully.
The glucose (optional) prevents iciness.
